In a world of chocolate sweet, There's a helper you should meet, Polyglycerol polyricinoleate, A name that's quite a mouthful, mate! It's made from glycerol and fatty acids, From castor beans, oh what a bliss! In chocolate, it does its part, To make it smooth and oh so smart. With lecithin by its side, Viscosity it does subside, Reducing friction, making it flow, Like a river, smooth and slow. In spreads and dressings, it's a star, Improving texture, taking us far, A short chain of glycerol, you see, Connected by ether bonds, fancy as can be.
